Open the pouch and secure both wings on a stable, tall mug. Bloom with 30 g water for 30 seconds, then gently add another 110 g to reach 140 g total water added, pausing if the filter fills. Lift at occasional drips. Do not squeeze the filter or leave it soaking in the coffee. Brew each pouch the same way and let the coffee be the variable.
